Candlelight Fruitcake

2 cups chopped pecans
2 cups raisins- these are one of the most important ingredients.
1 1/2 cups candied red cherries, divided use
2 1/2 cups candied pineapple, divided use
2 cups chopped dried mixed fruit
1 1/4 cups vegetable shortening
1 package wax paper
2 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup golden raisins
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/4 cups honey
6 large eggs
1/2 cup pecan halves
1/2 cup light corn syrup

Before getting on with the preparation of Candlelight Fruitcake comprises of , pre-heating the oven at 275*F .




Also you can line the bottom with greased wax paper of a greased 10-inch tube pan. After this consider sift together flour, salt, nutmeg, baking powder, cinnamon,and ginger. You can combine chopped pecans, raisins, 1 cup candied red cherries, 2 cups candied pineapple, and chopped dried. Then you can sprinkle a part of the flour mixture and toss to coat evenly. Keep it aside. Until light and fluffy, keep shortening the cream and the honey consistently. Then you can add eggs, one at a time, beating it well enough. Add the flour mixture, mix well, then fold in the fruit mixture. Prepare the pan, place it on a shallow pan of hot water on the bottom oven rack. Bake for 3 hours and 15 minutes. After this you can combine pecan halves, 1/2 cup candied red cherries, golden raisins, and 1/2 cup candied pineapple. Then take a saucepan and pour light corn syrup on it. Boil and cook it for sometime, at least 1 1/2 minutes. You can then mix it well by combining the fruit mixture with the pan contents properly. You can then arrange the fruitcake and bake it for 45 minutes. You can also wait for it to become dry but do not let it dry under any circumstances. Cool completely in the pan in the end , invert, and remove the wax paper totally.
